  • About

The best barbecue sauces are a carefully balanced blend of fruity, acidic, sweet, and hot notes. Here the combination of sour cherries and sweet Bings is perfect for grilled turkey, though you can pair it with any kind of meat. (It makes a mean pulled pork.)

Ingredients

Cherry-Fennel Barbecue Sauce

  • ½ lb [230 g] pitted fresh or frozen sour cherries
  • ½

Method

To make the barbecue sauce: In a blender or food processor, combine the cherries, onion, mustard, vinegar, peppercorns, fennel seeds, and chile powder and pulse on high speed until smooth. Transfer to a heavy medium saucepan and stir in the jaggery and salt. Cook over medium-high heat, stirring occasionally, until the jaggery is completely dissolved and the mixture starts to bubble.
