Bebinca is the ultimate Goan dessert, an egg and coconut milk pudding, which can be made in several ways. My grandmother Lucy made one type that’s called “mock bebinca,” flavored with mashed sweet potatoes and scented with freshly grated nutmeg. I always make this recipe for Thanksgiving, but it’s really a year-round treat.

Preheat the oven to 400°F [200°C]. Rinse the sweet potatoes to remove any dirt, pat them dry with paper towels, and poke several holes in them with a fork for the steam to escape. Put the potatoes in a baking dish or on baking sheet lined with aluminum foil.
