Sauce, seasoning, or ají: call it what you want. This is a great sauce to serve with meats, Tostadas, or even pasta or potatoes. Keep it on hand in the refrigerator, and use it to season meats. It will give an extra bite to foods.


  • ¾ cup (about 16 to 20) cloves garlic
  • ¾ cup olive oil
  • ½ cup mayonnaise
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 3 tablespoons cilantro leaves


  1. Bring some water to a boil in a small saucepan. Drop in the garlic. Cook for 5 minutes, drain, and cool.
  2. In a blender puree the garlic, oil, mayonnaise, salt and pepper until smooth, about 30 seconds.
  3. Add the cilantro and blend 10 seconds more.
  4. Serve or keep refrigerated. This ají will keep for up to a month if well refrigerated; just make sure to only put clean spoons in it when using!
