Sauce, seasoning, or ají: call it what you want. This is a great sauce to serve with meats, Tostadas, or even pasta or potatoes. Keep it on hand in the refrigerator, and use it to season meats. It will give an extra bite to foods.

Ingredients

  • ¾ cup (about 16 to 20) cloves garlic
  • ¾ cup olive oil
  • ½<

Method

  1. Bring some water to a boil in a small saucepan. Drop in the garlic. Cook for 5 minutes, drain, and cool.
  2. In a blender puree the garlic, oil, mayonnaise, salt and pepper until smooth, about 30 seconds.
  3. Add the cilantro and blend 10 seconds more.
