From the region of Antioquia, this is one of my favorites of all dulces. Uchuvas* (yellow gooseberries) are a very versatile fruit. This can be used for desserts, sauces, fish, and salads; as a dessert, it is especially good over white farmer’s cheese* or ice cream.

Ingredients

  • ¾ cup sugar
  • cups husked and washed uchuvas*
  • 1

Method

  1. In a small, heavy pot mix the sugar and ½ cup of water over medium heat. Simmer for 15 minutes.
  2. Add the washed fruit and simmer for 5 minutes more.
  3. Add the lime juice, mix, remove from the heat, and set aside to cool.
  4. Refrigerate and serve cold.
