Do we Colombians have a sweet tooth! Maybe the fact that we are such a large sugarcane grower and that we have so many fruits has had an influence in our passion for sweets. I love all desserts, especially when properly prepared with the best ingredients, no matter how many calories they have. My own personal theory is that it is better to have a bite of a great dessert than a huge slice of a “light” one. I was trained in my mother’s bakery since I was a little girl, and started decorating birthday cakes when I was thirteen. Together with my mother, I trained at Lenôtre in Paris, the American Institute of Baking, and many other places; she used to take me so I would help her with her bags. My mother is a sensational baker and taster.
