Sweet plantains are naturally sweet and very high in fiber. This recipe calls for baking them in their own skin without adding any butter or extra sugar as is traditionally done when they are baked in a pan. The plantains release a fantastic aroma that tells you when they are ready. They are very easy to cook, so much so that we often prepare them aboard our boat on the grill.

Ingredients

  • 2 very ripe plantains* (see Note)

Method

  1. Prepare a barbecue with cover and hot coals or preheat the oven to 350°F.
  2. Leave the plantains whole with skins on. Place on foil if using an oven; place on the grill directly over the coals if using a barbecue.
  3. Bake or grill with cover on for 30 to 40 minutes or until the skin ruptures and some of the plantain comes out of the skin and lightly browns.
  4. Remove the plantains from their skins and serve whole or in 2-inch chunks.
