Sweet plantains are naturally sweet and very high in fiber. This recipe calls for baking them in their own skin without adding any butter or extra sugar as is traditionally done when they are baked in a pan. The plantains release a fantastic aroma that tells you when they are ready. They are very easy to cook, so much so that we often prepare them aboard our boat on the grill.
