  • ½ ripe pomelo
  • 2 litres (70 fl oz /8 cups)

Method

Remove the skin and pith from the pomelo with a sharp knife. Cut out each segment and set aside. Pour the nitrogen into a nitro bowl and leave it to freeze for 1 minute until the bowl tempers to the nitrogen and the nitrogen stops boiling. Place the pomelo segments in the liquid nitrogen and freeze for about 2 minutes. Remove the frozen segments with a slotted spoon.
