This recipe has been adapted from Dan Hong’s Mr. Hong. I know it looks long, with some obscure ingredients, but it might be one of the best things you’ll eat and it really isn’t that difficult – an Asian Sauce, mostly just boiled, and a batter for aubergines which are deep fried. This is a stand-alone tower of a dish which can be served simply with some plain, boiled short-grain rice. I am mad for
