This is a take on veal holstein, an escalope, breadcrumbed and fried, topped with egg, anchovies and beurre noisette

Ingredients

Fried pig’s head

  • half pig’s head
  • 1 onion, peeled and chopped
  • 2 carrots, peeled and sliced

Method

To make the fried pig’s head

Using a blow lamp, singe any hairs from the head, paying special attention to the eyelashes and insides of the ears.

Place the head in a large saucepan, along with the vegetables, herbs and garlic. Cover with cold water. Add 2 tablespoons of salt.
