Method

Use a small frying pan that can be brought to the table. Heat the olive oil in the pan, add the tomato sauce, and break the eggs into the sauce being careful not to break the yolks. Cover the pan, and allow the eggs to cook to desired doneness. I love them with a runny yolk, but you can hard cook them if you prefer. Season with salt and pepper. Serve with bread to soak up the delicious sauce.</
