I always make more than I need, since leftovers are delicious as a cold side dish, or they can enrich a dish of spaghetti. One bunch is enough for an omelet, but if you make 2 or 3 bunches you can make Spaghetti with Broccoli Rabe for another day. For 2 to 3 bunches use ½ cup of extra-virgin olive oil.
Break the florets and the tender leaves from the stems. Strip the tougher leaves from their stems and add to the florets. Reserve the stems to make a stock in which to cook pasta. Wash and drain.
