You will need cannoli tubes for this recipe. Look for them at N.Y.Cake & Baking Distributor (1-800-94-CAKE-9) and ask for #CAN923-Small Cannoli Forms or #CAN922-Regular Cannoli Forms. Of course, you can purchase ready-to-fill cannoli shells in Italian markets.
Cut the lard or butter into the flour, either by hand or by pulsing in a food processor. Add the sugar, egg, and white wine to make a smooth dough. Shape into a ball, coat with a few drops of oil, cover, and let rest for 30 minutes.
Roll the dough into a log, and divide the log into 12 pieces. Shape each piece into a ball. Take each ball and roll into a 4-inch circle. Wrap each circle o
