The flavors of this simple trio of fresh spring vegetables blend perfectly. Served at room temperature, it can top crostini as an antipasto. And with the addition of small cooked pasta such as shells or ditali, it could be served as a delicious primo or side dish.


  • ½ a lemon
  • 4 artichokes
  • 1 pound shelle


Fill a bowl with water, squeeze the lemon juice into the water and drop the squeezed lemon into the bowl.
