Lentil and Couscous Salad

  • ¾ cup dry lentils
  • 1 cup couscous
  • ½ small onion


Pick over the lentils, wash, drain, and place in a pot. Add 3 cups cold water, bring to the boil, lower the heat, and simmer for 10 minutes. Turn the heat off and let the lentils cool in their own broth for 2 hours or even overnight.
