Fresh fruit in season and bites of cheese such as Caciocavallo, Pecorino, or Provola end the family meal. Pears, when available, are the preferred fruit and they are sometimes cooked in red wine to serve as a special dessert for guests.

Ingredients

  • cups red wine (such as Nero d’Avola or Cerasuolo di Vittoria)
  • ¼ cup honey

Method

Place the wine, honey, water, cinnamon stick, cloves, and lemon peel in a pot, bring to the boil, lower the heat and simmer for 5 minutes.

Meanwhile, peel the pears and cut each in half. Leaving the stems, carefully remove the few seeds with the tip of a paring knife.

Add the pears to the wine mixture after the liquid has simmered for 5 minutes. Simmer the pears for 10 minutes,
