Fatoush Salad

  • 1 large whole wheat pita bread loaf
  • 1 long seedless cucumber or 3 pickling cucumbers

Method

  1. Open and cut the pita bread into ½-inch-squares and toast under the broiler, or in the oven.
  2. Combine all the ingredients for the salad in a serving bowl and set aside.
  3. To make the salad dressing, thoroughly mix all the salad dressing ingredients.
  4. Just before serving, pour the dressing over the salad, toss well and adjust seasoning to taste.<
