Ashak is a ravioli-like pasta traditionally filled with gandana (similar to garlic chives), and served with a yogurt sauce. The Genoese ravioli with cheese and zucchini filling, below, popular throughout Italy, is very similar to the ashak of Afghanistan. One uses yogurt and garlic while the other uses butter, cheese and milk.

Ingredients

Filling

  • 1 pound finely chopped garlic-chives (gandana) or scallions, blot out all juice
  • 2 tablespoons vegetable oil</

Method

  1. For the filling, use a rubber spatula to mix all the ingredients in a bowl until you have a grainy paste. Set aside.
  2. Two ready-made wrappers will make 6 ashaks. Place 1 wrapper on a flat work surface. Place 6 small balls of filling, about 1-teaspoon each, in in 2 equal rows 2-inches apart. Moisten the edges and between the balls with a little water. Place a sec
