Behind the fenced courtyards in Central Asia, you may find dill hanging upside down to dry. I prefer to use dried dill in this polo as opposed to fresh dill, since fresh dill tends to clump in the pot and make the rice mushy. Shevid polo is the persian equivalent to the Bukharian baksh, which is a green-herbed rice dish as well. This polo is simple; it calls only for a combination of rice slowly simmered with dill and lima beans to color the simple ingredients. P
