During my time at culinary school, we were all required to work six months at the student restaurant. One of my favourite recipes from that time was the wholewheat bread. This is my version – it has a great texture because it’s crammed full of seeds.

Ingredients

  • 10 g instant dry yeast
  • 30 ml white sugar
  • 200 g</

Method

  1. In a large bowl, combine the yeast, sugar, flours, powdered milk, salt and oats.
  2. Add the raisins and seeds.
  3. Combine the oil and water in a jug and then add to the dry ingredients.
  4. Mix to form a wet dough.
  5. Cover the bowl with cling film and leave to rise in a warm place for 1 hour until doubled in size.
  6. Grease a 32-cm loaf
