After my stint in the UK, I was ready to commit to being a chef and officially make it my career path. I enrolled at a culinary school and began my three-year chef course with great enthusiasm. During this time, I perfected my skills and techniques and was exposed to some of the top chefs and kitchens in the country. The recipes in this chapter are much more technical and more challenging to execute than those in the other chapters.
