The perfect panna cotta wobble is what separates a good chef from a great chef – at least that’s what I once read in a food magazine. My panna cotta has just the right amount of wobble, even if I do say so myself.


  • 60 ml water
  • 10 ml powdered gelatine
  • 500 ml


  1. Place the water into a bowl, sprinkle over the gelatine and allow it to bloom.
  2. Place the cream, sugar, vanilla pod and seeds into a saucepan over medium heat and simmer for 5 minutes.
  3. Remove from the heat, add the bloomed gelatine and stir until melted.
  4. Add the chocolate and stir until melted and smooth.
  5. Divide the mixture between
