Method

Fry in butter for a few minutes four leeks and eight tomatoes, let them simmer for five minutes; then add required quantity of water (about two pints), add about six medium-sized potatoes, salt and butter, and bring to the boil. Cook for about three-quarters of an hour; pass them through a sieve, bring to the boil again and add two tablespoonfuls of cream or milk.
