ALTHOUGH THIS LOOKS A COMPLICATED DESSERT, if you buy the ice-cream and sponge, and just make the meringue, you will get away with gastro murder. It Looks impressive, especially when you put a match to it, but be careful because by dessert time dinner parties can get a bit raucous. The filling can vary according to the season or personal preferences. You could even mix some Christmas pudding with slightly softened vanilla ice-cream and flame it with brandy.
