The roast new potatoes are a simpler approach and are as much about the added flavours as they are about the potatoes, so feel free to add spices and diced pumpkin to the potatoes, or sliced zucchini, garlic and lemon thyme.

Preheat the oven to 180°C (350°F). Put the potatoes in a large saucepan and cover with cold water. Bring to the boil, then cover the pan with a lid and remove from the heat. Sit, covered, for 15 minutes, then drain.
