Green charred Freeka is sold at good Middle Eastern shops. This dish is best eaten with courgettes cooked in yoghurt, or with natural yoghurt.

Ingredients

  • One cup of freeka, washed well*
  • Two cups chicken stock or water

Method

Melt the butter in a saucepan and add the freeka. Saute lightly then add the chicken stock, add the salt and cover. Cook under medium heat for 20–25 minutes. Taste to check if well cooked; if not, add more stock.

The beauty of this dish is that you can always add water or stock until it is completely cooked.
