Enjoy this salad with grilled fish, meat or chicken.
Wash the spinach very well, making sure to remove all the grit. I do this by immersing it in a large pot or basin of cold water and then transferring it to a colander. Replace the water and start again, until the water is perfectly clear when all of the spinach is removed. This usually requires two or three washings. Chop the spinach as you like for a salad.
