For the Lebanese, tabbouleh is the queen of salads. No meal is complete without this dish, which can be an all round starter or an accompaniment to grilled fish or meat. You can also turn it into a canape by placing a spoon or two in a leaf of little gem lettuce. I have done this for many of my catering orders; served on a white plate it is quite presentable and very easy to eat.
