This lovely stew makes a delicious side dish which you can serve with grilled meat, chicken or fish, or as a great vegetarian main course. Served with khobez or Lebanese bread, it is filling and light. It can be eaten hot or as a mezze at room temperature.

Ingredients

  • 500 grams green beans, topped and tailed
  • 3 onions, diced
  • 4–5 whole cloves garlic,

Method

Heat oil in a pot over medium fire. Add the onions and saute until wilted.

Add the green beans and saute for 5 minutes; then add the tomatoes, garlic, salt, and water.

Cover and simmer 25 minutes or until the beans are tender. Do not overcook, as the beans will become mushy.
