When the Acadians were forced out of French Canada in the late 1700s, many of them flocked to Louisiana, bringing a rich culinary heritage along with them; it would eventually become the Cajun food we know today. In this classic Acadian comfort dish called fricot, fresh savory—a pungent, peppery herb—adds a piney zest to the dumplings, which puff up when they are dropped into the simmering soup.
