West Indies salad is old-school Southern and was my grandmother’s favorite dish to bring to a party. There was magic in her ice-cold glass bowl of seafood delicacy. We’d often serve this as an appetizer before our fish fries, fighting over it and scooping up every morsel as fast as we could. Keep it simple by serving with classic saltine crackers. You know what they say: Don’t mess with perfection.
