Curried Noodle Soup Garnishes

  • 1 lb. (454 g.) Rice noodles, fresh ribbon style, about ¼ inch (0.6 cm.) wide (bahn uot), store bought or homemade (or substitute ½ lb. or 227 g. dried rice noodles, cooked)
  • 2 Scallions, chopped
  • 6 tbsp. Peanuts, roasted in dry pan
  • 6 tbsp. Fried shallots or store-bought


  1. Soak noodles in lukewarm water 10 minutes; drain. Separate into individual strands.
  2. Heat a large saucepan of water for reheating the noodles.
