Ben’s first true love was Italian food. One of his fondest memories is visiting his local Italian restaurant and ordering their classic bruschetta. Done well using fresh quality ingredients, this simple appetiser can be an absolute joy. Here we switch things up using thyme and avocado for a So Vegan spin.
Halve the cherry tomatoes and add them to a mixing bowl. Pick the leaves from the sprigs of thyme, then add them to the bowl along with the balsamic vinegar, a drizzle of extra virgin olive oil and a pinch of salt and pepper. Stir to combine, then set to one side.
