The sweet potato really is the star of the show in these awesome brownies. It makes for a gooey, fudgy and utterly irresistible treat, but better still... it’s even slightly healthier than your traditional brownie. These never last long in our home.
Peel the sweet potato and cut it into 2cm-thick slices. Add the sweet potato to a steel steamer basket and place it on top of a saucepan of boiling water. Cover with a lid and steam for 20 minutes or until the sweet potato is soft. Set aside to cool slightly.

These are so tasty! The sweet potato acts as a great binder and makes the brownies fudgy and soft. These aren't super sweet brownies either, which I prefer because I like to eat mine with either sweetened non-dairy yogurt or ice cream.
