Spanish cooks can usually make good salt cod fritters in their sleep. But those made by Mari Carmen Vélez, the feisty chef at La Sirena restaurant in Alicante, are in a league of their own. Not only are hers impeccably fluffy and crisp; they are also adorable—shaped like tiny pears. Little wonder that the tapas bar at La Sirena is always mobbed.
