Though not particularly Spanish, my favorite egg-poaching method produces foolproof eggs without any fancy egg-poaching gadgets. A very Spanish way of serving these would be over cooked baby peas or tender fava beans sautéed with a little jamón or with garlicky sautéed mushrooms, Smoky Bread Hash, or in Castilian Garlic Soup.
