‘Chat’ is an Indian term for appetisers, palate teasers or small morsels eaten as a snack. This spice mix is used to flavour fried pastries, various potato preparations and tomato-based salads. The raw spiciness and tart flavour of the mix best suit fruit or vegetables — I find it works wonders when added to cooked root vegetables, accentuating their rich, earthy flavour.
