Pears poached in spiced red wine

When prepared in this manner, the pears take on an ethereal, translucent glow and have the appearance of beautiful ruby jewels. They can stand on the plate alone and unadorned or be served with a spiced ice-cream such as Mace or Cassia, or with Cinnamon Clotted Cream.
