Another excellent way to use leftover meat is to make this stuffed pasta. The stuffing is similar to the one used in the stuffed potatoes, but this one uses a good amount of fresh pork shoulder, rather than bacon, and includes no bread, so it’s a more meaty, dense stuffing. And it’s very easy, once the pasta is made. Just roll out the dough to the size of a piece of letter paper, spread about a half inch of the stuffing over it, roll it up, then slice it.
