This is a soup my mother used to do, but here I make it more complex to serve in my restaurant. It’s very traditional, and sometimes it has semolina or the water from cooking vegetables. I used to go into the forest with my father and my brothers early in the morning or late at night with a flashlight to look for frogs and put them in buckets with ice to bring home to my mother. The small white ones were best. Today we get them from Peerless Fish in Brookl
