Peasant Flour Soup with Frog Legs and Scallions

This is a soup my mother used to do, but here I make it more complex to serve in my restaurant. It’s very traditional, and sometimes it has semolina or the water from cooking vegetables. I used to go into the forest with my father and my brothers early in the morning or late at night with a flashlight to look for frogs and put them in buckets with ice to bring home to my mother.
