Shabu-shabu is a Japanese meat and vegetable fondue; each of the guests cooks his or her own food in a pot of simmering liquid set in the center of the table. When all the meats and vegetables are gone, the diners drink the broth. Traditional recipes start out with water flavored with a little Japanese seaweed (konbu), but I like to use a full-flavored dashi or good chicken or beef broth.
