Ingredients

  • 1 large cucumber, peeled, deseeded and thinly sliced
  • 1 tbsp soft light brown sugar (or palm sugar, if you can find it)

Method

Season the cucumber with a sprinkle of salt. In a large bowl, dissolve the sugar in the lime juice and soy sauce. Add the chilli and cucumber and mix well. Leave to sit for at least 15 minutes.

When ready to serve, add the sliced mint, basil and spring onions and stir through.
