  • 1 large cucumber peeled, deseeded and thinly sliced

  • 70 g granulated sugar

Method

Season the cucumber with a little sprinkling of salt.

Put the sugar and vinegar into a small saucepan and heat gently until the sugar has dissolved. Take off the heat, add the mint leaves and allow to cool.

Remove the leaves then pour the cooled liquid over the cucumber and leave for at least 15 minutes.

This keeps well in the fridge for a few days. When ready to serve,
