Ingredients

  • 1 large cucumber, peeled, deseeded and thinly sliced
  • 1 small onion, very finely sliced
  • 100 ml

Method

Season the cucumber with a sprinkle of salt and leave to sit in a colander for an hour.

Put the remaining ingredients into a small pan and bring to the boil. Reduce the heat and simmer until the sugar has dissolved. Leave to cool for 10 minutes.

Place the cucumber in a clip-top jar or a plastic container and pour the still-warm liquid over. Put on the lid and allow to cool fully
