A Japanese dressing with sesame seeds – black ones make for dramatic contrast if you can find them. Serve as a side dish with simple grilled fish, or use as the main component of a stir-fry.

Ingredients

  • 3 tbsp sesame seeds
  • 1 tbsp soft light brown sugar
  • 1 good

Method

Put the sesame seeds in a dry frying pan. Heat gently, stirring now and then, until they turn a toasty brown colour (be careful not to burn them; they turn very quickly).

Transfer half the seeds to a mortar, grind then add the sugar, miso paste, soy sauce and mirin and mix together so you have a thick dressing.
