This is a North African dish with spiced peppers, tomatoes and eggs. There are many variations across the globe, such as ‘huevos rancheros– in Mexico, which is served with tortillas and avocado. It makes a good dinner or Sunday brunch, especially with warm pitta to soak up the juices. Instead of feta you could try Wootton White, an organic British feta-style cheese.
