Pacific oysters stir-fried with coriander noodles

Ingredients

  • 200 g/ oz fresh Chinese egg noodles or spaghettini pasta
  • olive oil

Method

  1. Blanch noodles briefly in boiling water, then drain and dress with a little olive oil to prevent sticking.
  2. Shuck oysters and reserve juices for dressing. Discard shells.
  3. To make oyster dressing, mix all ingredients in a bowl. Taste for balance between acid and salt and adjust if necessary. Set aside.
  4. Divide all ingredients into 4 portions. F
