  • 8 just-ripe yellow bananas
  • 1 pint/480 mL buttermilk

Method

  1. Peel the bananas and cut them in half.
  2. Dip the bananas in the buttermilk and, without wiping off the buttermilk, dredge in the manioc flour until coated all around.
  3. Immediately deep-fry in vegetable oil at 350°F/177°C until golden brown, 2 to 3 minutes.
