If you choose to use dried chickpeas, soak them first overnight. Discard the soaking water and cook the chickpeas in fresh water for approximately 3 hours, or until they are completely cooked and soft.

Ingredients

  • 400 g (14 oz) of tinned chickpeas (drained and rinsed)
  • ¼ tablespoon of bicarbon

Method

Bring a small saucepan of water to a boil. Add the chickpeas and bicarbonate of soda. Boil for 30 minutes, or until very soft. The chickpeas should be covered with water the entire time. Add extra water as needed if water evaporates too quickly. Remove the pan from the heat. Set aside to cool the chickpeas in the cooking liquid. You will use this cooking liquid later.
