Fried cubes of lamb, toasted pine nuts or both are toppings that complement the hummus well.

It is also delicious with spicy merguez sausages – these aren’t Syrian, but they do add wonderful flavour!

Ingredients

  • 400 g (14 oz) of tinned chickpeas (drained and rinsed)
  • ¼ tablespoon of bicarbon

Method

Bring a small saucepan of water to a boil. Add the chickpeas and bicarbonate of soda. Boil for 30 minutes, or until completely cooked. The chickpeas should be covered with water the entire time. Add extra water as needed if water evaporates too quickly. Remove the pan from the heat. Set aside to cool the chickpeas in the cooking liquid. You will use this cooking liquid later.
