Heat the oil in a large non-stick pan and fry the garlic with the coriander for 3–4 minutes.
Stir in the prawns, cayenne pepper and lemon juice, until the prawns are coated evenly. Continue shaking the pan over the heat for about 5 minutes, until the prawns are cooked.
Salt and pepper to taste. Serve immediately with rice and salad.
